Thalipeeth is a savory multigrain flatbread made with roasted flours, spices, and herbs, known for its hearty texture and rich, rustic flavor.
½ cup jowar (sorghum) flour
½ cup bajra (pearl millet) flour
½ cup rice flour
½ cup wheat flour
¼ cup besan (gram flour)
1 medium onion, finely chopped
2 tbsp fresh coriander, finely chopped
1 tbsp garlic paste
1 tbsp ginger paste
1 tbsp green chilli paste (adjust to taste)
1 tbsp white sesame seeds
½ tsp turmeric powder
1 tsp red chilli powder
Salt to taste
2-3 tbsp curd (yogurt)
Water (as required)

1. Finely chop the onion using a chopper and also finely chop the coriander.ln a large mixing bowl, add jowar flour, bajra flour, rice flour, wheat flour, and besan 3. Add salt, garlic paste, ginger paste, green chilli paste, white sesame seeds, turmeric powder, red chilli powder, chopped onion, and chopped coriander. Mix everything well.Add curd and mix again. Gradually add water and knead into a soft dough.Take a banana leaf and lightly grease it with oil to prevent sticking.Take a portion of dough and spread it evenly on the leaf using your fingers. Make small holes in the dough using your fingers. Transfer it onto a hot tawa and gently remove the banana lea. Add a little ghee into each hole and cook well on medium heat.Flip and cook from the other side until golden and crisp.Repeat the same process for the remaining dough.
