Stuffed Karela is a traditional Indian dish featuring bitter gourds filled with a spiced masala stuffing and cooked until tender, perfectly balancing bold flavors with a hint of sweetness.
Karela (bitter gourd) – 6 medium
Garlic – 4–5
Light green chillies – 2–3
Farsan – 20 gm
Turmeric – 1 pinch
Salt – to taste
Oil – 1 tbsp
Powdered sugar – 1 tbsp
Red chilli powder – 1 tsp
Cumin powder – ½ tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
Carom seeds – 1 tsp
White sesame seeds – 1 tbsp
Coriander leaves – 2 tbsp, chopped
1. Wash the karela and peel lightly. Make a slit and boil with salt and turmeric, then remove the seeds.
2. On a stone grinder (silbatta), add garlic, light green chillies, and farsan. Grind coarsely.
3. Transfer this mixture to a bowl. Add turmeric, red chilli powder, cumin powder, coriander powder, garam masala, salt, carom seeds, white sesame seeds, and powdered sugar. Mix well.
4. Add chopped coriander leaves. Mix properly to make the stuffing.
5. Stuff this mixture tightly into each karela.
6. Then tie the string tightly around the karela.
7. Heat oil in a pan. Place the stuffed karela, cover, and cook on low flame.
8. Turn occasionally and cook until soft inside and slightly crispy outside.
