Rice Ukad is a simple and comforting preparation made with rice flour cooked in spiced buttermilk, creating a soft, savory, and soothing meal.
Rice flour – 1 cup
Ginger – 1 inch, crushed
Garlic – 2–4 cloves, crushed
Ghee – 1 tbsp
Cumin seeds – 1 tsp
Mustard seeds – ½ tsp
Green chilli – 1–2, chopped
Hing – ½ tsp
Curry leaves – few
Turmeric powder – ½ tsp
Buttermilk – 2 cups
Salt to taste
1. Heat ghee in a pan. Add cumin seeds and mustard seeds, and let them crackle.
2. Add crushed ginger, crushed garlic, chopped green chilli, hing, and curry leaves. Sauté for a minute until aromatic.
3. Add turmeric powder and mix well.
4. Pour in buttermilk and add salt. Stir continuously and let it come to a gentle boil.
5. Lower the flame and gradually add rice flour while stirring continuously to avoid lumps.
6. Cook on low flame, stirring well, until the mixture thickens and comes together.
7. Cover and cook for 2–3 minutes until the rice flour is fully cooked.
8. Serve hot with a little extra ghee on top if you like.
