A classic Maharashtrian rice preparation using fresh field beans and aromatic spices!
Fresh coriander – ½ cup
Garlic – 6–7 cloves
Ginger – 1 inch piece
Cumin seeds – 1 teaspoon
Cloves – 3–4
Cinnamon – 1 small piece
Oil – 2 tablespoons
Onion, sliced – 1 medium
Pavta (field beans) – 1 cup (fresh)
Turmeric powder – ½ teaspoon
Red chilli powder – 1 teaspoon
Salt – to taste
Rice – 1 cup (soaked for 20 minutes)
Water – 2 cups (or double the rice)
1. Grind coriander, garlic and ginger into a smooth paste.
2. Heat oil in a pan. Add cumin, cloves and cinnamon. Let them crackle.
3. Add the prepared green paste and sauté for a few seconds.
4. Add sliced onions and cook until translucent.Mix in the fresh field beans.
5. Add turmeric, red chilli powder and salt.
6. Sauté for a couple of minutes. Add the soaked rice and gently mix.
7. Pour in double the amount of water. Cook on high heat until all the water evaporates.
8. Transfer the rice onto a tawa, cover the pot, sprinkle a little water on top of the lid, and steam on the lowest flame for 10 minutes.
9. Open the lid, fluff the rice, and your delicious Pavta Bhaat is ready!
