Traditional Konkani-style gram flour dumplings simmered in a spicy coconut gravy.
For Vade:
Gram flour (Besan)
Turmeric
Salt – to taste
Water – as needed
For Dubuk:
Chana dal
Sliced onion
Coconut
Cloves
Ginger
Garlic
Peppercorns
Coriander powder
Cumin powder
Coriander (chopped)
Oil
Red chilli powder
Turmeric
Garam masala
Water
Salt – to taste
Oil
1. In a bowl, add gram flour (besan), turmeric, and salt.
2. Add little water gradually and whisk to make a smooth, lump-free, pourable batter (like pakoda batter).
3. Heat 1 tsp oil in a pan.
4. Add chana dal and stir for a minute.
5. Add sliced onion and sauté until light golden.
6. Add coconut and fry for 1–2 minutes.
7. Add cloves, ginger, garlic, and peppercorns.
8. Grind this mixture to a smooth paste using a little water
9. Heat 1 tablespoon oil in a pot.
10. Add the ground paste and sauté for 2–3 minutes on medium flame.
11. Add coriander powder, cumin powder, red chilli powder, turmeric, and garam masala. Mix well.
12. Add water and bring it to a boil.
13. Add salt to taste.
14. Now add the vade.
15. Drop small portions of batter using a spoon or fingers into the simmering gravy.
16. Cook on low flame for 10–12 minutes so the vade absorb the flavour.
17. Add chopped coriander and mix gently.
