A delicious snack made with sweet corn and melted cheese, shaped into bite-sized balls and fried to a golden, crispy perfection.
2 medium boiled and mashed potatoes
¼ cup chopped green capsicum
¼ cup chopped yellow bell pepper
¼ cup chopped red bell pepper
½ cup boiled sweet corn (roughly chopped)
1-2 chopped green chillies (adjust to taste)
2 tbsp cornflour
¼ cup breadcrumbs
½ tsp chilli flakes
½ tsp dried oregano
Salt to taste
2 tbsp chopped coriander leaves
Mozzarella cheese cubes or grated cheese (for stuffing)
For coating:
2 tbsp all-purpose flour (maida) + water to make a slurry
Extra breadcrumbs for coating
Oil for deep frying
1. In a large bowl, combine mashed potatoes, capsicum, bell peppers, boiled corn, green chillies, coriander, cornflour, breadcrumbs, chilli flakes, oregano, and salt.
2. Mix everything well to form a soft dough.
3. Take a small portion of the dough, flatten it, place some mozzarella cheese in the center, and shape it into a ball.
4. Prepare all the balls this way.
5. Dip each ball in the maida slurry, then roll it in breadcrumbs to coat evenly.
6. Heat oil in a kadhai on medium flame.
7. Carefully drop the balls into the oil and fry until golden brown and crispy.
8. Serve hot and enjoy that epic cheese pull!
