A beloved Maharashtrian snack of thinly sliced potatoes coated in a spiced batter and shallow-fried until crisp and golden.
2–3 potatoes
1 cup semolina (rava/sooji)
1 tsp red chili powder
½ tsp turmeric powder
Salt to taste
Oil, for shallow frying
1. Wash and peel the potatoes. Slice them into medium-thin roundels. Soak in water for 5–10 minutes to avoid discoloration, then pat dry. In a plate, mix semolina with red chili powder, turmeric powder, and salt. Take each potato slice and coat it evenly with the spiced semolina mixture. Press gently so it sticks well. Heat oil in a pan. Place the coated potato slices and shallow fry on medium flame until golden and crispy on both sides. Serve hot as a side dish with dal-rice, varan-bhaat, or enjoy as a crispy snack.
